Despite the data showing self-reported increases in fruit and vegetable intake, the effect of CSA participation on serum markers of diet quality has not yet been characterized. One of our ongoing projects seeks to measure the impact of CSA membership on serum dietary biomarkers, such as vitamin D and total lipid panel. We will take a sample from participants before their participation in their CSA program begins and after participants have been receiving their share. We hope that these data will help us to begin quantifying the effects of dietary intervention on physiologic markers.
