Kerri Baxter received her undergraduate degree from the University of Kentucky and completed both a dietetic internship and master's degree in Clinical Nutrition at the University of Alabama at Birmingham. After graduating from her internship, she worked in long-term care and acute care settings in Alabama and Maryland. In 2015, Kerri joined the Clinical Nutrition Department at Vanderbilt University Medical Center. Before joining the internship faculty in 2019, she served as a clinical group leader, guest lecturer, and preceptor. Kerri is passionate about training future dietitians in a diverse array of professional settings that provide a strong foundation of knowledge and highlight the many career paths in the dietetics profession.

Katie Hinton received her undergraduate degree from Western Kentucky University and completed a combined dietetic internship and master's degree program in Clinical Nutrition from the University of Memphis. After completing the internship, Katie began her dietetics career as a clinical dietitian at Vanderbilt University Medical Center and Monroe Carell Jr. Children’s Hospital at Vanderbilt, where she worked with both pediatric and adult patients for almost seven years. As a preceptor for Vanderbilt’s dietetic interns, Katie fell in love with education and developing the knowledge of dietitians-to-be. She completed her Doctor of Education in 2023 at Lipscomb University, and that same year she excitedly joined the internship faculty team as an educational coordinator.
